hey there
I'm Lauren
I’ve loved baking + diet coke for a long time. Like a really long time.
That picture is from my 4th birthday party. I distinctly remember getting to visit the cake decorating store and picking out the princess edible image and those little floral sugar cubes for the top of MY cake which my mother kindly helped me decorate. Dessert has made me happy for as long as I can remember. Nothing beats pulling fresh cookies from the oven, slicing into a well adorned cake, or the smell of yeast blooming. Don’t you even try to argue with me
So I started baking for fun in, dare I say, middle school?? I wasn’t half bad and pretty soon by the time I was in high school people were paying me for cakes. In 2015 I founded Bakologie, a custom cake and dessert company based in Sioux Falls, SD. I continued baking as a job throughout highschool and college. Upon graduating from the University of South Dakota where I consumed an ungodly amount of Diet Coke I decided I would launch my baking business full time.
Within a year I had scaled Bakologie to a 6 figure operation. While I enjoy baking and decorating fancy cakes for others nothing makes me happier than easy and approachable desserts anyone can make at home because dessert, and food more generally, has the power to unite us and help us to celebrate anything from weddings to ordinary tuesdays. Who wouldn’t want to be a part of that magic?

Why Daily Bread?
Well daily bread is a reference to anything that nourishes and fills you up every day. In my case thats baking, and honestly I would venture to say that is true for many people. There is something about fresh baked anything that warms from someone from the inside out. There is rarely a kinder gesture than something that was lovingly baked and gifted. Think like everyday baking for YOUR people! You know, the kind of baking with items you already have in your pantry for an afterschool snack, baking that takes one bowl and 10 minutes to whip up on a tuesday night, and sometimes everyday baking is that fancy holiday dessert.
Whatever the occasion, daily bread recipes are always approachable, delicious, and are made to PEOPLE PLEASE. I want to create recipes that you are excited to whip up and that warm your people from the inside out. It is my sincere hope that these recipes become part of your “daily bread.” This is baking made approachable and accessible.
lessons from a lemon meringue pie
FOOD IS SO MUCH MORE THAN WHAT WE NEED TO SURIVIVE. FOOD IS HOW WE CONNECT, SHOW LOVE, AND CREATE MEMORIES. IT IS A JOY TO HELP OTHERS DO JUST THAT.
A while ago, I was asked to make a pie for a woman's last request in hospice. Shockingly enough, a request such as this can really make one think... As I zested lemons and whipped up meringue I thought about all the lemon meringue pies this woman must have had over the years. And while I'm sure those pies were good, I'm guessing the memories and the moments that went with them were better. I bet lemon meringue pie brought back sweet memories of friends and family that she had gathered over the years, moments of celebration and joy.
I always find it remarkable that food has a unique way of connecting us to moments and people that have long passed. You know, like that barbie birthday cake where the cake was the skirt of the dress or maybe your grandma's ginger cookies at Christmas?
We all have those desserts that bring us back to just a moment in time. Sometimes all it takes is a bite of lemon meringue pie to bring you back to those sweet memories, a walk down memory lane, even if only for a moment. I love cake and pie (really any sort of refined sugar-- I don't discriminate), don't get me wrong, but this baking is about SO MUCH MORE than the cake.
It's about celebrating simple joys, sweet milestones, and lifetimes of happiness with a little extra sugar. So I'm grateful to help you create new family favorite recipes that pair perfectly with your happiest moments. And while I know I said it wasn't really about the pie, I do hope it was the best dang lemon meringue pie she ever had. 💛✨🍋
