Blueberry Muffins with Streusel Topping

Okay. Hear me out. Store bought blueberry muffins. You know what I am taking out. Soft, delicate cake crumb, plump jammy blueberries, and the slightest hint of artificial blueberry. Don’t get me wrong, homemade blueberry muffins are good but I think that a blueberry muffin really **needs** just a little hint of artificial blueberry flavor that comes a grocery store mix.



The dilemma: box mixes from the store dry out and aren’t the soft, dense cake that I want it to be. My mission was clear: a perfect combination of homemade cake and store bought blueberry flavor, topped with a healthy amount of crunchy streusel topping.



These blueberry muffins are just that. In order to make the batter moister and have a denser crumb I used a combination of oil and water, added sour cream for density, and more flour and sugar to balance out the added wet ingredients. I used a mix that has real blueberries in a can plus I added in some additional frozen blueberries so I had a few more but that is entirely optional. You know what's not optional? Making these ;)





To top it all off: a combination of flour, sugar, brown sugar, and butter come together to make a delicious crunchy streusel.
